  1. Cut of all pieces of the mean that are not fat, but tendons. (keep as much fat as possible)
  2. Roll the meat on the long side, to create a sort of arch.
  3. Use baking string to tie the arch into a tight packing
  4. Cover each side in a lot of salt, black pepper and paprika
  5. Put into a baking container


  1. Insert the baking thermometer into the larger piece if you have more than 1
  2. Set the alarm for 52 degrees Celsius
  3. Put into oven on 90 degrees Celsius
  4. Cover the container in which you put the meet with aluminum foil
  5. Once the alarm goes off, take the meat out
  6. The temperature will keep rising even when outside, re-set the thermometer to 57 degrees.
  7. Once the alarm goes off you can start cutting the meat
